Cheesy Muffins


I've been wanting to make muffins for awhile, but didn't know what kind. Usually I stick to blueberry or some type of banana nut muffin. I wanted something savory instead of sweet. So after rifling through my cookbooks and recipe's, I found the perfect muffin to make from The Hummingbird Bakery Cookbook. I chose the Spinach and Cheddar muffins, but made a few changes to the recipe.

I know what your thinking, gross. At first I had no idea what these would taste like. Also I added kale with the spinach. Once these puppies came out of the oven, I spread some butter on the top and took a bite. Amazing, these were so good. They remind me of cheddar cheese biscuits. These muffins were a great breakfast treat as well as a great side to a bowl of soup. 




If you want to take a chance and make these here's the recipe:

Spinach, Kale and Cheese Muffins

2 tablespoons butter
1/2 small red onion, finely chopped
2 3/4 cups all-purpose flour
1 teaspoon cayenne pepper
1/4 teaspoon sea salt
2 cups grated cheddar cheese
1 cup whole milk
1 egg
2 oz. baby spinach leaves
2 oz. kale leaves

I like to use a sharp or even extra sharp cheddar for the cheese, but use whatever you like. Also based on the saltiness of the cheese, the amount of salt may have to change. So don't be afraid to taste before your bake. With the kale and spinach, I like to chop them up so that they are small pieces instead of a huge strand. This makes the mixing as well as the wilting go easier.

Preheat oven to 325 F

Melt the butter om a saucepan over medium heat, then fry the onion until cooked. Add the kale and spinach until wilted. Set aside.

Put the flour, baking powder, cayenne, salt, and cheese in a large bowl. In a separate bowl, mix the milk and egg together, then slowly pour into the flour mixture and beat.

Stir in the onion and greens mixture until evenly dispersed. The mixture will be a wet mixture but don't worry that's what it's supposed to be like.

Spoon the batter into the paper cases and bake in the oven for 30 to 35 minutes, or until a skewer inserted in the center comes out clean. Let the muffins cool slightly in the pan before eating.

Brunch


While I'm stuck in the house due to this storm, it's nice to look at pictures from last Sunday. Last weekend I went to this great place called Sarabeth's in the Upper East Side for brunch. Since it was a sunny day I decided to dress for the occasion. I spent the mid-morning enjoying a lovely breakfast with four lovely girls.


If ever you decide to do brunch in NY go to Sarabeth's on the UES and try the potatoe waffles with applesauce and sour cream. Yummy!!! The chicken sasuages were also amazing. I hope you all are having a great weekend. If you live in the East Coast, be safe.

Wearing Red


I'm not big on being very matchy, but when I put this polka dotd red top on I just knew that my red shoes and bag would be perfect. Whenever I wear red, I always feel like the colors just pop. Also, I've been trying out new places for taking photos other than my roof. Hope everyone's week is going well.

Farmers Market



I'm back, finally got my Internet fixed and can blog again. These photos are from Friday. I had the day off from work and woke up early to head to the farmers market at Union Square. I love this market with all the fresh fruits and veggies. Whenever I get the chance, I always make the choice to go the farmers market to get my produce.



As the summer season is getting closer to ending, I'm taking the time to dress as summery as possible and enjoy the warm weather. This dress was a gift from my mom and it's so light and perfect for hot summer days. I always tend to wear something comfortable when heading to the market, since I have to carry everything back home on the subway.

Dreary Days


I've been wanting to post these pictures up for days, but I've been having some Internet problems at home. My Internet won't be officially fixed until next week, so posts will be light this week. Anyway, other than my Internet issues, it's been raining a lot over here in NY. It finally stopped today and the sun came out. These pictures were taken on Saturday when it was very dreary outside. On days like that I always try to wear colorful outfits to keep my mood up. I hope you all have a great weekend!

Still Okay, Summer






 Even though I am so over summer and the heat and longing for Autumn, I still love some of the summer looks that my favorite brands are putting out. While perusing through Dahlia's website my eye caught these lovely little summer dresses. Maybe summer can stick around for a few more weeks for me to wear these little beauties.

Heat Waves and Exploring



I took these pictures last weekend, during the unfortunate heatwave that hit the northeast. Instead of making breakfast, which is my weekend treat, I could only find the energy to whip up an icy smoothie. I made myself a peanut butter and banana smoothie with some skim milk, honey, and protein powder. Then I spent the super hot weekend hanging out in Brooklyn and Queens.



Spent Saturday going allover Brooklyn with my awesome cousin and stuffing our faces with yummy BBQ and then spent Sunday admiring some graffiti art in Long Island City, near PS1.  I made a choice last weekend to not let the heat keep me indoors. Exploring the different neighborhoods in this city are my favorite weekend activities.

Afternoon in LIC


Saturday afternoon I spent the day hanging out in one of my favorite neighborhoods, Long Island City. It's been awhile since I've felt comfortable enough to go outdoors and not feel as if the sun were going to suck the life out of me.
